These Tuna & Chickpea salad stuffed Pita’s are just that, simple and easy with no cooking involved. Here is how I made them:
Add one drained 4.6 ounce can of @blueharborfishco Wild Albacore Tuna in Water with a touch of sea salt to a bowl along with 1 cup of chickpeas, kalamata olives, diced tomato, chopped red onion, chopped fresh parsley, and ground black pepper. Toss with a splash of red wine vinegar and extra virgin olive oil. Prepare your pita. Carefully slice open the pita to form a pocket. Line the inside of the pita pocket with green leaf lettuce. Fill the lettuce lined pita with the tuna and chickpea salad. Tuck in some additional fillings like banana pepper rings, pickles or cucumber slices. Enjoy!
