Yesterday was my birthday so I took some time away from IG to celebrate with eating out and indulging on cheesecake, but today I made these Mediterranean Tuna Stuffed Avocados 🥑 for lunch! I had them with some grain free lime tortilla chips and arugula on the side. Here’s how I made the Mediterranean Tuna.

In a medium bowl add one 5 ounce can of wild albacore tuna 🐟 drained. To the tuna add 1 small diced plum tomato 🍅, 2 tablespoons chopped red onion 🧅, 1 tablespoon non-pareil capers, a handful of fresh chopped parsley, a drizzle of extra virgin olive oil, 1 tablespoon red wine vinegar, 1/2 teaspoon salt and 1/2 teaspoon ground black pepper. Mix all together to combine and serve on a salad, stuffed into avocados, mixed into pasta, scooped onto tortilla chips and it’s also really yummy on toasted sourdough with mashed avocado. So darn delicious 😋 Hope you’re having a great day!

  1. That looks awesome! Did you cook that yourself? Wouldn’t mind trying! What do you keep around to snack on for those times you can stop to make a meal for your post workout recovery. Try some of my CBD infused beef jerky
