When the cold weather kicks in so does cold and flu season so this IMMUNITY BOOSTING BONE BROTH SOUP will help to keep your health in check! This soup is packed with veggies and lots of flavor like roasted garlic and ginger, plus the nutrients to give your body the nourishment it needs.

To make the IMMUNITY BOOSTING BONE BROTH SOUP you will need:
– 8 roasted cloves of garlic (roast on sheet pan with olive oil on 400 F for 10 minutes).
– 2 tablespoons olive oil.
– 1/2 cup sliced scallions.
– 1 teaspoon grated ginger.
– 2 carrots chopped.
– 2 celery stalks chopped.
– 4 cups chicken bone broth.
– 1 cup shredded chicken (optional)
– salt and pepper to taste.
– handful fresh cilantro roughly chopped.

Heat olive oil in a medium pot on the stove top on medium high heat. Add scallions and ginger and sauté for 2-3 minutes until fragrant. Add the carrots and celery and cook for another 5-6 minutes until the veggies start the soften. Add the roasted garlic, chicken and bone broth and season with salt and pepper. Bring to a boil, cover and reduce heat to simmer. Summer for 10 minutes then remove from heat. Add the soup to individual bowls and top with fresh cilantro and avocado. Adjust seasoning with salt and pepper as needed. Serves 4.
