This Kale, Lentil & Quinoa salad is loaded with protein and healthy fats and will keep you full for hours! Here is how I made it:
In a large bowl add some organic kale with the stems removed. Tear the kale into small pieces and squeeze on some fresh lemon juice. With clean hands massage the lemon juice into the kale leaves. Add some canned lentils that have been drained and rinsed along with cooked quinoa, quartered cherry tomatoes, diced avocado, pumpkin seeds, fresh chopped parsley and chopped red onion. Drizzle with extra virgin olive oil and season with salt and pepper. It was nourishing and delicious. Hope youโ€™re having a great day!
