This falafel and roasted red pepper hummus bowl 🥗 was nourishing and delicious! In this bowl I also included a quick cucumber tomato salad 🥒🍅tossed in olive oil, red wine vinegar, sea salt and cracked black pepper along with chunky feta, kalamata olives, pepperoncini, red onion and fresh chopped parsley over a bed of mixed greens and a squeeze of lemon. Both the falafel and red pepper hummus are from Whole Foods. It was a fresh and tasty lunch. Hope you’re having an awesome day!
