This easy peasy Caprese Chickpea Pasta Salad with capers is light, refreshing and flavorful. I used chickpea rotini pasta to make it but any type of pasta will work just as well. This pasta salad is also great made in advance for an easy meal prop option.

Cook pasta as directed on package, let cool and add to a bowl along with marinated mozzarella balls, organic grape tomatoes, fresh basil, capers, the olive oil marinade from the mozzarella balls, a splash of red wine vinegar, sea salt and cracked black pepper to taste. If you can’t find marinated mozzarella you can easily do it yourself by tossing mozzarella balls in extra virgin olive oil, red wine vinegar, garlic, dried oregano, salt and pepper, than store overnight in the fridge. Feel free to sub the capers for olives and the mozzarella for feta for a saltier bite. Either way it’s delicious. Hope you’re having a great day!
