This air-fried flaked salmon with chickpea feta pasta, tomatoes and spinach was pure deliciousness in every bite! The salmon was air-fried on 400 for 12 minutes and here’s how I made the pasta.

Cook pasta in boiling water as directed on package, drain and set aside with a drizzle of olive oil. In a medium pan heat 1 tablespoon of olive oil. Add cherry tomatoes and sauté for 4-5 minutes until the tomatoes start to blister and burst. Add a few handfuls of baby spinach and heat through until the spinach wilts. Add the tomatoes and spinach mixture into the pasta along with a generous amount of crumbled feta. Season with salt and pepper to taste. The pasta cab be served hot or cold. Enjoy!
