Slow Sunday’s call for Cinnamon Sweet Potato Waffles 🧇 with fresh berries 🍓🫐, crispy bacon 🥓, avocado 🥑 and a fried egg!
These Cinnamon Sweet Potato Waffles 🧇 are soft and fluffy with just the right amount of sweetness and slight crispiness on the edges. Here’s how to make them:
1 Large sweet potato.
1 cup of all purpose flour (sub gluten free)
1 tablespoon sweetener of choice.
1 teaspoon baking powder.
1 teaspoon cinnamon.
1 egg.
1 cup milk of choice.
1 tablespoon coconut oil.
1 teaspoon pure vanilla.
(1) Poke holes in the sweet potato (with peel left on) with a fork in 2-3 spots around the potato. Loosely wrap the sweet potato in a paper towel, place on a microwave safe plate and microwave on high for 4 1/2 minutes. Carefully slice the hot potato in half, let cool.
(2) Heat your waffle iron to medium high heat. Use a spoon to scoop the cooked sweet potato out of the peel, add to a bowl and mash well. Add the flour, sweetener, baking powder and cinnamon and combine.
(3) Add the remaining wet ingredients and mix well until it forms a batter like consistency. A few lumps in the batter is ok. (4) Pour ladle fulls of the batter into your waffle iron and cook each waffle 5-6 minutes depending on your waffle iron until the waffles are golden and fluffy. Makes 3-4 servings.
