Savory Mushroom & Spinach Parmesan Oats with a half boiled egg 🍳 and 🥑. So incredibly good and nourishing and it almost tastes like a mushroom risotto.

To make these tasty oats combine bring one cup of vegetable broth and 1/2 cup water to a boil. Mix in a 1/2 cup of oats and 1/2 cup sliced cremini mushrooms. Reduce heat to simmer and let cook for 3-4 minutes stirring occasionally until liquid is absorbed and mushrooms are tender. Stir in a couple handfuls of organic baby spinach, 2 tablespoons grated Romano Parmesan cheese and 1/2 tsp. garlic powder. Wait for the spinach to wilt then transfer to a bowl. Top with whatever you like. You can also sub the spinach for any other wilting green such as kale. Cozy and delicious and I hope you give them a try!
