Plant Based Burrito Bowl with black beans, cilantro lime rice, tomato salsa, chili roasted corn, guacamole, lettuce, red onion and sweet plantain chips. The plantain chips and tomato salsa were store bought so I don’t have recipes for that but here’s how I made the cilantro lime rice and chili roasted corn.

🌽 For the fresh corn salsa heat 1 tablespoon of avocado oil on the stove top in a pan. Add 1 cup of cooked corn kernels (I used canned corn) with 1 teaspoon of chili powder and a sprinkle of salt. Sauté for 3-4 minutes until the corn becomes toasty.

🍚🌿 For the cilantro lime rice, add two cups cooked brown or white rice to a bowl. (I used precooked microwaveable brown rice from a packet). Toss with fresh lime juice, fresh chopped cilantro and season with salt and pepper.
