If you have some leftover crusty bread on hand make this Summer Beet Panzanella Salad! To make this tasty salad combine the following ingredients into a bowl.
– 1/2 cup cooked marinated beets cut into 1 inch pieces. (I used @lovebeets )
– 1 cup cherry tomatoes πŸ… sliced in half.
– 1 cup English cucumber πŸ₯’ cut into 1 inch pieces.
– 1/2 cup yellow bell pepper (or any color bell pepper) cut into 1 inch pieces.
– 1/2 cup pitted kalamata olives or green castelventrano olives πŸ«’ .
– 1/4 cup thin sliced red onion πŸ§… .
– Feta cheese, goat cheese or fresh mozzarella balls your choice πŸ§€. (I used goat cheese)
– Loaf bread like a baguette πŸ₯–, Italian or French bread cut into 1-2 inch cubes.
– Extra virgin olive oil for drizzling.
– 1-2 tablespoons lemon πŸ‹ juice.
– 1 tablespoon red wine vinegar.
– Fresh basil 🌿 for garnish.
– salt and pepper.
(1) Arrange bread cubes onto a sheet pan. Drizzle on olive oil, season with salt and pepper. Toss to combine and bake on 400 for 10 minutes until lightly toasty ….or toast in toaster oven for 4-5 minutes or until lightly golden.
(2) In a large bowl combine the beets, cherry tomatoes, cucumber, red onion, bell pepper and kalamata olives. Drizzle in some olive oil, a few splashes of red wine vinegar and a few generous squeezes of fresh lemon juice. Toss together to combine.
(3) Add the toasted bread to the bowl and lightly toss in the salad mixture to coat. Season with salt and pepper. Top with cheese and fresh basil. Serves 2-4.
