I had some leftover rotisserie chicken, pre-made hard boiled eggs and half of an unused avocado in the fridge so it was a perfect opportunity to make this Cobb salad with lemon Dijon dressing! To make the dressing add 2 tablespoons extra virgin olive oil, 1 tablespoon fresh lemon juice, 1 teaspoon Dijon mustard, 1/4 teaspoon salt and 1/4 teaspoon garlic powder to a small mason jar, close the lid and shake well until creamy. It was a delicious and nourishing lunch! Hope youโ€™re having a great day.
