Brunching on this two egg, asparagus and Gruye


Brunching on this two egg, asparagus and Gruyere omelette 🍳 with scallions, pan seared tomatoes πŸ… and toasted sourdough with mashed avocado πŸ₯‘.
To make the omelette beat two eggs with a splash of milk in a small bowl. Heat a 10 inch non-stick pan with 1 tablespoon of butter until melted. Add 2 tablespoons chopped scallions and sautΓ© the scallions in the butter for 1-2 minutes then add 1/2 cup chopped asparagus. Continue to sautΓ© until the asparagus start to tender, season with black pepper and a light dusting of garlic powder. (about 3-4 minutes). Turn the heat down to medium low and add the beaten eggs. Evenly distribute the eggs throughout the veggie mixture in the pan. Add grated or shredded Gruyere cheese into the egg mixture (approx 1/4 cup). Let the eggs set and the cheese melt into the eggs. With a spatula carefully flip one half of the omelette into the other half. Turn off the heat and transfer the omelette to a plate. Enjoy!
