A nourishing protein packed salad for lunch today!
Garlic and herb baby potatoes πŸ₯” with lemony white beans, cucumber πŸ₯’, cherry tomatoes πŸ…, hard boiled egg 🍳 and sliced kalamata olives over spinach with fresh lemon juice πŸ‹, extra virgin olive oil, sea salt and cracked black pepper.
For the garlic and herb baby potatoes bring a pot of water to a boil. Add the potatoes and cook until fork tender. Drain the water and place the potatoes back into the pot. While hot toss with extra virgin olive oil, minced garlic, dried Italian seasoning, salt and pepper.
To make the lemony white beans drain and rinse a can of white cannellini beans then add to a bowl. Toss with 1 tablespoon extra virgin olive oil, the juice of one lemon, 2 tablespoons fresh chopped parsley, 1/4 tsp. salt and 1/4 tsp. cracked or ground black pepper. Store any leftovers in an air right container in the fridge for later.
