A great start to the new week with a 4 mile walk and this super yummy lunch!

Rotisserie chicken topped with Trader Joe’s romesco sauce, cilantro lime brown rice, black beans and tomato, avocado salad. It was a nourishing and tasty meal.

To make the tomato avocado salad add equal amounts of tomato and avocado cut into 1 inch pieces into a bowl. Add lots of fresh lime juice, fresh chopped cilantro, sea salt and cracked black pepper to taste.

To make the cilantro lime rice add some cooked brown rice to a bowl. Toss with fresh lime juice, fresh cilantro, sea salt and cracked black pepper.
